If there’s one thing we’d like to banish from kitchens across the country, it’s pre-ground pepper. Why? A fresh grind releases natural aromas and flavors in the moment (which is why old-school waiters will still visit your table with a big pepper mill, offering fresh-ground pepper with a flourish). The pre-ground stuff is almost always going to be less spicy and less flavorful.
